Healthy "chips"?
Sure, and yummy.
 
Pot of water, chopped up sweet potato and a couple
of chook stock cubes...

 
When the sweet potato is cooked, give it a whizz
with a blender until smooth.
 
I then added cornmeal or polenta flour until starting to thicken...

 
Give it a really good stir every now and then,
and make sure to keep the lid on.

When it bubbles, it will be really really hot like lava!

 
I added a lump of frozen pesto I had,
check for seasoning...

 
Tip into lightly oiled dish, and let it cool...

 
When cold, flip it out!

 
Cut it into chip sizes, and arrange on baking paper...

 
I mixed up a little virgin oil, finely chopped up
garlic and rosemary leaves.
Add some fresh ground pepper and stir well...

 
Brush over chippies...

 
and sprinkle with parmesan cheese...

 
After cooking!
All crispy and finger licking good...
