What's for dinner?...

Dinner a couple of nights ago.
Very easy & very delicious.
In a baking dish, I placed some sliced onion and garlic,
then some sliced up fresh fennel.
I quickly panfried until brown, one chook breast per person.

Season the chicken with s & p, and I also used thyme...

Slice fresh tomatoes and place on top of chicken.
I also like lots of chopped fresh parsley, basil would be good as well, but out of season.
Cover well with foil, and place in slowish oven.
I cooked for about 2 hours on really slow.
Just place in oven and forget about it...
Fab - lush...
(you could add potatoes if you wanna)
