Tonights dinner...

2 onions slowly caramelising until golden brown and tasty...

Osso bucco in the pot...

Flavours to add, the caramelised onions, garlic, ginger, bay leaf, fennel seeds,
cinnamon, star anise...

Beautifully bubbling away for 2-3 hours...


Strained broth, meat cooling, then roughly chopped and put back into broth,
also add fish sauce to taste, and fresh lime juice.
Make sure to check and re check the flavour...
I also cooked some rice noodles, and tonged them into the bottom
of the individual bowls before adding meat and broth...

All the bits and pieces that people can add to their own bowl as per taste.
The paper thin beef on the left, was added to the broth, just before serving up.
I turned the heat off, and put in the beef, the heat will be enought to cook it...

The yumminess in my bowl, waiting to be gobbled.
And trust me, they did!
Very fulfilling dish, but also, very light at the same time...
