Last nights dinner was a slight spin on a recipe for chicken.
Super easy, and super delicious...

Skinless chicken thighs, coated in seasoned flour and pan fried... |

Until golden brown, then remove from pan and set aside... |

To same pan, add chopped onion and garlic, stir for a couple of minutes... |

Add sliced capsicum, stir for a few minutes... |

Add sliced chorizo sausage, stir for a few minutes... |

Add some dry white wine, and let boil for a couple of minutes, then add chicken stock and chopped canned tomatoes... |

Some chopped finely peeled orange rind, and thyme leaves... |
|
Add these to the pot... |

Add some salt and pepper, and let simmer for 1.5hrs. We like our chicken falling off the bones. You can serve some rice separately with the dish, or as I did, add some raw rice to the pot and cook until just tender. Don't forget to check the seasoning. Serve up and watch your family devour it... |
